Rutin and Other Polyphenols in Fagopyrum esculentum Hairy Roots

Hairy root cultures of Fagopyrum esculentum were induced by infection with Agrobacterium rhizogenes MAFF 03-01724. After 4 weeks of culture in Murashige-Skoog liquid medium, one of six hairy root clones synthesized the flavonoid rutin in an amount of 0.24% of dry weight, which was over 10 times that in the roots of the field-cultivated plants. In three basal liquid media (Murashige-Skoog, Woody Plant and Gamborg B5), the hairy roots grew well and produced rutin together with large amounts of catechins [(+)-catechin, (-)-epicatechin and (-)-epicatechin 3-O-gallate] and procyanidins (procyanidin B-1 and procyanidin B-2 3'-O-gallate).
