Effects of Carnosine and Anserine on the Destruction of Vitamin B_<12> with Vitamin C in the Presence of Copper

Vitamin B_<12> is destroyed by the addition of substantial amounts of vitamin C in the presence of copper. Effects of carnosine and anserine, natural water-soluble antioxidants, on the destruction of vitamin B_<12>, were studied. Addition of carnosine (10mM) effectively repressed the destruction of vitamin B_<12>, but anserine had only weak inhibitory effects.
