This paper deals the sugar metabolism which was studied for the purpose of improving the yield of mycelium relating to the initial sugar concentration in a medium. As a result of a theoretical study on the correlation between sugar consumption and mycelial growth in the submerged culture of Lentinus edodes, it was discovered that the following relationship exsists in a medium containing a 5% initial sugar, during the whole culture period ; σ=k_1μ+k_2The σ is a specific sugar consumption rate, the μis a specific growth rate and the k_1 and k_2 are constants.Sugar consumed for constructive matabolism was calculated at about 20% of the total sugar consumption and the rest was used for maintanance matabolism.TCA cycle was found temporarily in the process of sugar matabolism pass way of L. edodes. However there was little accumulation of organic acids. About 12% of the total consumed sugar was decomposed into carbon dioxide, and an accumulation of the a chemical compound equal in vomume to 70% of the total sugar consumed. Most part of thes product was a polysaccharide, consisting mainly of glucose mainly. This polysaccharide has the nature that it precipitate in a 60% ethyl alcohol ant that it is hardly soluble in an acid solution and more resistable than the usual polysaccharides aganist hydrolysis with sulfuric acid.
