We examined the correlation between the curcumin content and the color indices, L^* a^* b^*, of 27 turmeric powder samples or their ethanol extracts by using a colorimeter. The results showed that there was not an adequate correlation between curcumin content and the color indices of the powder or ethanol extract of turmeric samples, although it has been generally believed that deep yellow or somewhat reddish turmeric contains much curcumin and is good quality. On the other hand, high correlation was recognized between curcumin content and a* value, that is correlated with red color, of the ethanol extract adjusted to alkaline pH.
