Vinegar Production by Acetobacter rancens Cells Fixed on a Hollow Fiber Module

Vinegar was produced by Acetobacter rancens cells fixed on the surface of polypropylene hollow fibers as an alternative surface culture in rice vinegar fermentation. A cylindrical glass tube (17.8 cm^3) having 100 hollow fibers (volume fraction : fibers/reactor=5%, specific interfacial area : 8.2 cm^<-1>) was used as a bioreactor where ethanol medium was running along the outside of the fiber while the oxygen was supplied through the inside of the fiber. The bacterial cells were fixed on the surface of the fiber before starting the cultivation and consumed the oxygen which permeated through the inside of the fibers.In this system, the oxygen partial pressure inside the fibers was very important for the production of acetic acid from ethanol. In continuous operation with the p_o_2 of 840 mmHg, retention time of 100 h, ethanol concentration of 39.2 gl^<-1>, and seed vinegar concentration of 7.9 g acetic acid/l, acetic acid could be produced at 30 gl^<-1> yielding a productivity of 0.2 gl^<-1>h^<-1> compared with 0.02 to 0.08 gl^<-1>h^<-1> observed in traditional surface culture of vinegar production (50 g acetic acid/l). This suggested that the bioreactor devised here might be applicable to improve traditional vinegar production.
