Interaction of Some Plant Food Extracts with Aryl Hydrocarbon Receptor Determined by in Vitro Reporter Gene Assay

The aryl hydrocarbon receptor (AhR) is a ligand-activated transcription factor that mediates the biological action of many aromatic environmental contaminants such as dioxins. In this study, we investigated the interaction of plant food extracts with the AhR using the AhR-dependent luciferase reporter gene assay. Thirty-nine plant food extracts, including vegetables, fruits, herbs and teas, were tested in vitro. Among them, green leafy vegetables such as spinach and shungiku, and some citrus such as lime, grapefruit and lemon, and herbs such as sage and rosemary showed luciferase induction at high concentrations.
