The hydrolytic action of the acid-stable saccharogenic amylase on various starches and glucosyl substrates was investigated.This amylase could hydrolyze various starches, linear glucosyl substrates and branched glucosyl substrates to high extents of over 90%.Gluco-bioses having alpha linkage such as kojibiose, nigerose, maltose and isomaltose, and β, β-trehalose were hydrolyzed with this amylase. The ratio of the hydrolyzing ability of this maylase on these five gluco-bioses was as follows;maltose : nigerose : isomaltose : β, β-trehalose : kojibiose=1 : 1/71.50 : 1/79.40 : 1/353.78 : 1/414.68.
