Inhibition of two saccharogenic amylases, acid-stable and less acid-stable saccharogenic amylase, of Aspergillus awamori var. fumeus-1-B42 by various compounds and proteases was investigated.By Hg^<++> salt less acid-stable saccharogenic amylase was highly inhibited, but acid-stable saccharogenic amylase was not inhibited. Both amylases were similarly inhibited by iodine. Inhibition of less acid-stable saccharogenic amylase by Cu^<++>, Ag^+ and UO_2^<**> salts, sodium sulfide and acid dyes at pH 3.0 was stronger than that of acid-stable saccharogenic amylase, and conversely the latter amylase was strongly inhibited by potassium permanganate, sodium bisulfite and δ-gluconolactone compared with the former amylase.Inhibition of two saccharogenic amylases by proteases varied with the kind of protease. Acid-stable saccharogenic amylase was inhibited by pronase highly and papain, and less acidstable saccharogenic amylase was inhibited by pepsin highly and slightly by pronase.These results indicate that the two saccharogenic amylases are composed of different enzyme proteins and are not analogous enzymes subjected to some modifications.
