The cultural conditions for the production of acid protease by submerged culture of Rhizopus sp. No. 548,one of the selected strains, were determined, and some properties of acid protease produced were investigated. The results were summarized as follws : (i) composition of the medium was determined, containing the following constituents (%) : wheat bran, 2.0; starch, 2.0; rice bran, 1.5; defatted soybean meal, 0.5; NaNO_3,0.2; and KH_2PO_4,1.0,(ii) optimal pH of the culture for the production of acid protease was about 4.0,(iii) productivity of acid protease was affected by a change of aeration rate represented by oxygen absorption rate coefficient, K_d, (iv) optimal pH value for enzyme action on milk casein was 3.3,(v) stable pH range of the enzyme was found to be from 3.0 to 5.5 at 40℃, (vi) optimal temperature for enzyme action was 55℃, and (vii) action energy in the themal inactivation of the enzyme was apparently 51 Kcal at pH 4.5,50℃.
