A heptapeptide, H–Cly–Pro–Phe–Pro–Ile–Ile–Val–OH (<B>1</B>), was synthesized and found to be indistinguishable from the natural peptide (<B>2</B>), isolated from a tryptic hydrolysate of Hammersten casein by means of chromatography, amino acid analyses, and mass spectrometric measurements. Both peptides (<B>1</B> and <B>2</B>) have a strong bitter taste.
