Effects of Temperature on Cell Growth and Anthocyanin Production in Suspension Cultures of Perilla frutescens

For optimization of anthocyanin production by suspended cultures of Perilla frutescens, the effect of temperature on the cell cultures was investigated in flasks. At higher temperatures in a range of 22-28℃, a higher (specific) growth rate was obtained. Anthocyanin production was remarkably reduced at the relatively high temperature of 28℃, and 25℃ appeared to the optimal for the volumetric productivity of the pigment.
