Isoraffinose(6^G-β-galactosylsucrose) Synthesized by the Intermolecular Transgalactosylation Reaction of Escherichia coli β-Galactosidase(Food & Nutrition)

The enzymatic transgalactosylation reaction of 0-nitrophenyl-β-D-galactoside and lactose in the presence of sucrose as an acceptor was studied. The main product of E. coli β-galactosidase was a hitherto undescribed trisaccharide, O-β-D-galactopyranosyl-(1→6)-O-α-D-glucopyranosyl-(1←→2)-O-β-D-fructofuranoside, to which we assigned the trivial name isoraffinose. Sucrose was an excellent acceptor to accumulate isoraffinose in good yield. Allolactose and trace of unidentified oligosaccharides were also formed by this reaction.
