Saccharomyces diastaticus produces extracellular glucoamylases and ferments starch. Wehave isolated glucoamylase-non-producing (amy) mutants from wild-type strains of S. diastaticus carrying a STAl gene after mutagenesis with ethylmethane sulfonate. All amy mutations were recessive and were divided into two complementation groups, amy1 and amy2. The amy1 group may be located in the STAl gene. The amy2 mutation was involved in both glucoamylase production and flocculation.
