Four pungent principles, α-sanshool, hydroxy α-sanshool, γ-sanshool and hydroxy γ-sanshool, were isolated from Hua Jiao 1st grade [花椒 (pericarps of Zanthoxylum spp.) 1級品] and Hua Jiao 2nd grade (花椒 2級品) samples, imported from China. In addition to those compounds, isopulegol, linalool, limonene, etc. were detected in the essential oil of Hua Jiao 1st grade specimens and 2-hydroxy-4,6-dimethoxyacetophenone, sabinene, β-phellandrene, terpinen-4-ol, etc. in that of Hua Jiao 2nd grade specimens. Then, chloroform and hexane extractive fractions from 23 Chinese Zanthoxyli Fructus (山椒) samples in the Japanese market were subjected to high performance liquid and gas chromatography: 7 samples were found to be identical with Hua Jiao 1st grade and 14 samples with Hua Jiao 2nd grade, and the remaining 2 samples to be a mixture of the two.
