Both the enantiomers of 3-hydroxy-4, 5-dimethyl-2(5H)-furanone (sotolon) were synthesized from the enantiomers of tartaric acid. Both of them were shownto exhibit the same sugary flavor and insect attractancy as those of (±)-sotolon.
