This paper introduces a method for production of oligomeric proanthocyanidins from polymeric proanthocyanidins. The method comprised of two steps: the first step is nucleophilic substitution of catechin monomers at the C-4 position of proanthocyanidins under weakly acidic conditions, and the second is separation of oligomers by usual absorption chromatography. Throughout the procedure, no special chemical reagents were used, except for citric acid for the first step and ethanol for separation; therefore, the products can be applicable to production of food additives. The polymers and catechins are not necessarily extracted from plants, and the reaction can be directly applied to plant materials. Insolubilized proanthocyanidins, which can not be extracted from plants, were also converted to soluble oligomers. Application to the polymeric proanthocyanidins of persimmon and Chinese quince fruits was described.
