A new mechanical foam breaker with a rotating disk (MFRD) was developed and the design and operational characteristics of this foam breaker are discussed. The foam breaker was connected to a motor in the head space of the fermentor and foam breaking was carried out through the liquid particles from the rotatin disk being dispersed into the rising foam. With this foam breaker, it was possible to handle foam of differing composition and quality without the addition of antifoam agents.
