A strain of Leuconostoc mesenteroides, which had been aerated in buffer solution, lost its anaerobic glycolysis activity, whereas it maintained the activity of aerobic glycolysis.The anaerobic glycolysis of the aerated cells was induced by pyruvate, suggesting inactivation by aeration of the ethanol-forming system of the cells. However, pre-aeration had no effect on the activities of aldehyde and alcohol dehydrogenases in the cell-free extracts.In contrast, both the ethanol- and acetaldehyde-oxidizing abilities of the aerated cells were manometrically shown to have disappeared. It seems that these dehydrogenases become unoperational with pre-aeration, resulting in the loss of anaerobic glycolysis.
