Pendulan, an extracellular glucan from Porodisculus pendulus, was found to decrease in molecular weight with the extension of the fermentation period. The molecular weight decreased gradually after 8 days and reached a constant value after 11-14 days. The change in molecular weight was indicated by a change in viscosity of the culture filtrate. The results of methylation analysis and complex formation with Congo Red showed that the structure of the repeating unit and the ordered conformation of the polysaccharide were not changed by depolymerization.
