We succeeded in isolating an enzyme having acidic pH optimum from developing bovine enamel responsible for amelogenin degradation. Importance of alternating acid and neutral zones in relation to the functions of ruffle-ended (RA) and somooth-ended ameloblasts (SA) was confirmed for degradation of amelogenin matrix by acidic and neutal proteases and for growth and maturatlon of hydroxyapatite crystals.
