The storing method of piled green tea leaves (about 200 kg. 1 m<SUP>2</SUP>.) by discontinuous aeration (20 min. blowing, 40 min. stop) was examined with regard to the maturity of leaves. The temperature of piled leaves (the height of pile was 140-160 cm. at first) during the storage was measured. The temperature difference between the upper and lower part of piled young leaves was larger(at about 10°C) than that(at about 5°C) of mature leaves. The height of piled leaves generally decreased to approximately 70% of the initial height after the discontinuous aeration of 24 hours. But when wet leaves were piled, no decrease of height was observed. The decrease of height was larger in young leaves than in the mature leaves of the same plucking season. The variation of air velocity in each part of piled leaves was remarkable in the case of young leaves, therefore it was presumed that young leaves were packed more compactly in comparison with the mature leaves during the storage. From the organoleptic test of the tea which was made from preserved leaves, no significant deterioration was observed. But when the young leaves were preserved under higher atmospheric temperature, it should better to blow more volume of air in order to protect deterioration which was caused by vigorous respiratory heat of tea leaves.
