Metabolism of S-methylcysteine and pectin esterification in Chinese cabbage, Brassica pekinensis Rupr.

S-Methyl-L-cysteine was actively metabolized in Chinese cabbage and carbon from its methyl group was distributed into both the soluble and insoluble fractions. The high incorporation of ^<14>C from the methyl group into the insoluble fraction after administering of S-methyl-L-cysteine-^<14>CH_3, and our previous results that S-methyl-L-cysteine is demethylated to give cysteine, suggest that S-methyl-L-cysteine might act as a methyl donor in Chinese cabbage. To obtain evidence for this possibility, incorporation of the methyl-^<14>C of S-methyl-L-cysteine into methyl esters of pectic substances was investigated. Most of the ^<14>C incorporated into pectic substances was liberated by treatment with dilute alkali and pectin esterase. The results show that S-methyl-L-cysteine acts as a methyl donor to form pectin ester.
