A serine proteinase of Aspergillus sydowi strain OK-22 isolated from dried bonito, "Katsuobushi", hydrolyzed gelatin and collagen type I to degree of limit hydrolysis of approximately 12% as well as milk casein in contrast to other fungal proteinases which generally hydrolyze gelatin and collagen to much lesser degree than they do milk casein.
