L-Malic acid fermantation was established by a mixed culture of fumaric acidproducing Rhizopus arrhizus NRRL 1526 and Paecilomyces varioti AHU 9417,which can produce malic acid from glucose and has a high fumarase activity. In this fermentation, it was favorable to inoculate these two kinds of molds simultaneously into the medium and then culture the mixture. Under the optimal conditions, malic acid yields above 60%, based on initial glucose(8%), was obtained after 3.5 days of shaking culture.On the other hand, the highest yield obtained by the single culture of P. varioti was 45% after 5 days incubation.
