We examined total serum cholesterol levels of Brazilians and Japanese-Brazilians and observed that the mean value for Brazilians is significantly higher. We also studied a few factors which may cause this difference. For Japanese-Brazilians, the total cholesterol level does not depend on how long they have been living in Brazil. Japanese food does not increase the total cholesterol level when compared to Brazilian food, and coffee is not a very important factor in increasing the total cholesterol level. The intake of sugar and fat seems to have greater effects.
