Lipoxygenase, Hydroperoxide Lyase and Volatile C_6-Aldehyde Formation from C_<18>-Fatty Acids during Development of Phaseolus vulgaris L.

Kidney bean plants (Phaseolus vulgaris) were found to have the capability to produce C_6-aldehydes (hexanal and hexenals) from linoleic and linolenic acids. The various organs tested had lipoxygenase and hydroperoxide lyase activities responsible for the C_6-aldehyde formation. Young leaves showed relatively high activities for C_6-aldehyde formation. However, the activities of the leaves decreased gradually with leaf expansion. Seedlings and seeds containing cotyledons showed low activities for C_6-aldehyde formation, because of the occurrence of an inhibitory factor in the cotyledons. The substrate specificity of the enzymes was essentially the same among the various developmental stages of leaves tested.
