Film formation and distribution of wine yeasts isolated from grape musts were investigated. The isolated strains were divided into three groups as follws by their ability to form films on various media, viz. simple synthetic medium (SM), malt extract (ME), artificial medium supplemented with yeast extract (YEA), and wine medium (WM).Group 1 includes the strains belonging to Pichia, Candida, etc. which form true films on all the media : -Film-forming yeasts.Group 2 includes the strains belonging to Saccharomyces or other genera which form pseudofilms on YEA and WM : -Pseudofilm-forming yeasts.Group 3 includes the strains which do not form any film on all the media : -Film- lacking yeasts.The rations of the group 2 and that group together with the group 1 to total isolates were about 20% and 37% respectively. The 106 strains isolated were classified into 6 genera, 14 species and 1 variety. Almost all strains of the group 2 belonged to the genus Saccharomyces, particularly S. oviformis was widely distributed, and reached 40% of them.103 strains of wine yeasts maintained in stock cultures (Saccharomyces), which were reinvestigated, resembled the isolated strains in the film formation and distribution.
