Enzymatic conversion of D-arabitol to D-xylulose was studied by immobilizing whole cells of acetic acid bacteria having D-arabitol dehydrogenase activity. Gluconobacter suboxydans Kawai cells entrapped in k-carrageenan gel were selected as the most favorable enzyme preparation. The enzymatic propertied of immobilized cells converting D-arabitol to D-xylulose were investigated and compared with those of free cells. The optimum pH and temperature for the immobilized cells were similar to those for free cells, respectively. Inhibition by D-arabitol as the substrate was observed only in the case of immobilized cells at a level of more than 0.5 M. 80.6g of D-xylulose was produced from 84.3g of D-arabitol at an almost constant rate during ten-days operation using a multi-stage continuous reactor.
