Since Saccharomyces yeasts have been reported to grow on acetate medium more slowly(μ : 0.1〜0.2hr^<-1>)than Candida, Hansenula and Pichia yeasts, they not been considered siutable for biomass production from acetate. Mutants obtained by treatment with ethyl methane sulfonate or ultraviolet light could grow only 1.2 times more repidly than the parental strain, and their growth properties were unstable. However, in general, hybrid clones of Saccharomayces yeast produced by mating between different strains showed significantly higher growth rates on acetate medium. The growth rate of these hybrids reached comparable levels to those of Candida yeasts, the highest so far observed being 0.26hr^<-1>. This enhanced growth rate has been maintained stably over more than five transfers for at least one year period.
