Antioxidant activities of xylooligosaccharide and acidic xylooligosaccharide based on iron-reducing function were studied. Xylooligosaccharide and acidic xylooligosaccharide showed weak but concentration-dependent antioxidant activities based on its iron-reducing function. Because the purity of xylooligosaccharide was lower than that of acidic xylooligosaccharide, we found that the antioxidant activity of the former was lower than the activity of the latter. The antioxidant activities of these ohgosaccharides were lower than those of dietary polyphenols, such as (-)-epigallocatechin gallate and quercetin. However, the Japanese diet includes a large amount of hemicellulose which would be degraded to these oligosaccharides in the intestinal tract, and we could also take these oligosaccharides as food additives. Then, the daily intake of xylooligosaccharide and acidic xylooligosaccharide may be beneficial to human health.
