Kinetics of Crystalline–Noncrystalline Phase Transition in Sucrose

The in situ X-ray diffraction measurements in sucrose have been performed to investigate the kinetics of crystalline–noncrystalline phase transition. The characteristic time until the integrated intensity of (111) Bragg reflection becomes half was observed in a temperature range from 413 to 433 K by analyzing time-dependent X-ray diffraction intensity data. The temperature-dependent waiting time $t_{\text{h}}$, called the incubation time, is interpreted using Arrhenius' equation. It can be confirmed that the phase change in sucrose shows the isothermal first-order phase transition from crystalline to noncrystalline states.
