Acid and heat stabilities of water-soluble proteins extracted from an acidophilic and thermophilic unicellular alga, Cyanidium caldarium, by French pressure cell treatment were investigated. Soluble proteins from Cyanidium were not particularly acid or heat stable compared with those from mesophilic algae such as Anabaena variabilis and Anacystis nidulans. The results suggest that the acidophilic and thermophilic mechanisms of Cyanidium can not be ascribed to the acid and heat stabilities of the proteins in the cells.
