牛乳および乳製品中の糖の定量における除たん白剤の改良 : 有機分析(第59報)

タングステン酸ナトリウムと硫酸アルミニウムカリウムの組み合わせは牛乳,粉乳および練乳の希薄溶液から室温でたん白を沈殿させる.第一法は両者を溶液として用いる場合,第二法は両者から製造した粉末除たん白剤を用いる場合で,ともにたん白を沈殿させて遠心分離し,上澄液をとって3,6-ジニトロフタル酸による比色法によって乳糖を定量する.練乳中のショ糖は0.1<I>N</I>塩酸で加水分解し,0.1<I>N</I>水酸化ナトリウムで中和したのち同試薬で発色させて定量する.この方法は多数の試料を迅速に定量でき,塩基性炭酸亜鉛を除たん白剤とする前法との相対誤差は±2.5%以内であった.
