This paper is about the production of white sugar during the Hansei period in the Amami islands. Because white sugar was not popular among the Amami islanders, only a few people knew how to produce it. Sugar-production was introduced to Japan from China. Okinawa began producing 'browun' sugar in 1623 and 'white sugar' in 1662. It is probable that sugar-production was introduced to the Amami islands at the same time. For the people white sugar was harder to produce than brown sugar, therefore, white sugar was produced in smaller quantities. In the period of the 8th Shogun, Yoshimune (the first half of 18th century), the sugar industry was encouraged nation widely. And this was the turning point for whit-sugar-production in the Amami islands. In the Sanuki region, they developed the method for producing sugar, which was adopted throughout Japan. Sugar made by this method was called Sanbon Haku, which was very popular in Japan. The Satsuma feudal clan promoted the Sanuki method of producing sugar. Sugar production on the Amami islands was controlled by the Satsuma government, even though sugar production on the Amami islands had government backing-up. Naturally the results were poor, so the Amami sugar industry was short lived, contrary to the fact that the Amami islands had a more suitable climate for sugar production. Then at the Sanuki region the sugar industry failed due to a lack of commitment by the islanders to develop the industry because of the complexity of the molasses-separating-process, non profitability and inferior quality of the production. Although on account of its failure the development of the sugar industry was removed from the governments list of high priority tasks, sugar was still produced in small quantities until the end of the feudal government. There is no record of the production-method adopted by the Amami islanders, but all indications are that it was the Sanuki method. Just before the Meili Restoration, the Satsuma--clan purchased European style sugar manufacturing machines and constructed four modern sugar manufacturing factories on the main Amami inland. But these sugar manufacturing factories were abolished after a short term by the government. Even though the Amami islands are now considered to be a rural area, we should not forget the fact that technical advances in sugar production were made by the Amami people.
