Water Sorption Isotherms were obtained for well-milled rice (KAGAHIKARI, 1982 crop) by the static-desiccator method : samples were equilibrated in bell-jars over saturated salt solutions in 25℃. Nine saturated salt solutions at Aw's ranging from 0.12 to 0.97 were used. The Isotherms had a sigmoid shape and a hysteresis loop. Data were transformed into the BET, Smith, Halsey, Oswin and GAB equations by their formulas. To evaluate the goodness of fit of the equations as applied to the experimental sorption data, a mean relative percentage deviation in modulus E(%) (=100/n ∑ Xi - Xi'|/Xi, Xi:observed, Xi': calculated, n: numbers of values) was used. The Oswin and GAB equations gave good fits of experimental data. Some significant parameters- the monolayer moisture contents in the BET and GAB equations were found to be 8.29(des.), 7.23(ads.) and 10.05(des.), 13.39 (ads.), respectively. Values of Isotherm Factor (dAw/dX) (X:moisture content, d.b.) using the Halsey equation were calculated and reported as a function of moisture content.
