In order to establish the rapid determination of soluble solid in the tea extracts, a refractometric method with a hand refractometer and a gravimetric method with a picnometer were investigated.<BR>The convertion factors for refractometric values were as follows :<BR>for green tea extract: 0.79<BR>for roasted tea extract: 0.79<BR>for black tea extract; 0.93<BR>In the relation between the specific gravity at 20°C. and the content of soluble solid in the tea extract, the following equations were existed :<BR>for green tea extract : y=207x-206.324<BR>for roasted tea extract : y=203x-201.816<BR>where x : specific gravity at 20°C.<BR>y : content of soluble solid in the tea extract.
