Table salt gives rise to various lesions according to its amount taken in. Especially, an excessive intake of salt is said to cause hypertension or ulceration of the gastric mucous membrane. From the meal habits in Japan the problem of taking too much salt is common through out the country without distinction of the urban and rural districts. Therefore, in order to maintain and promote our health, it must be kept in mind that less salt should be taken in a day. Although there are at present many processed foodstuffs containing much salt, few studies have so far been made on their salinity. Upon this, using as materials the instant rah mein (hereinafter referred to as rah mein for short) which is eaten most frequently by us irrespective of age and sex as a substitute food or refreshments, we made an analysis of the amount of table salt contained in it.
