In order to establish a scientific method for grading the color of black tea infusion, the opticaldensity of the infusion of 37 samples displayed on the two competitive exhibitions in 1956 was measured with a spectrophotometer, and the three attributes of the color (luminance, dominant wave length and purity) were calculated by I. C. I. method. The relations between the three attributes of color and the sensory estimation of these infusions were examined.<BR>The sensory estimation had a negative correlation with the luminance, while a positive one with the dominant wave length or purity. It was considered that the color of black tea infusion could be estimated reasonably by this method.
