It was found that the extraction ratio of water-soluble protein in sobyean oil meal was increased considerably by treating the meal with highly active cellulase preparation produced by Trichoderma viride. Though the cellulase preparation contained proteases and other various enzymes besides cellulase, protease was presumed to play little role in increasing the extraction ratio, based on the results of action of the cellulase preparation on unheated and heat denaturated soybean oil meal. In the cellulase preparation, acidic, alkaline, and neutral proteases were shown to be existent.It was also deduced, from the results of experiments, in which soybean oil meal was treated with the cellulase preparation whose protease activity was made as low as possible by heating in acidic region and adding sodium lauryl sulfate, that cellulase played much more important role than proteases in increasing the extraction ratio of water-soluble protein.
