Effects of Temperature and pH on the Production of Maltotetraose by α-amylases of an Alkalopsychrotropic Micrococcus

Maltotetraose (G_4) production by α-amylases of an alkalopsychrotrophic Micrococcus sp. 207 was investigated. In the early stage of the reaction at 30℃, about 60% of amylose was converted to C_4,and thereafter the amount of G_4 decreased because of the G_4-hydrolyzing activity of the amylases. This activity was significantly depressed under cold and alkaline reaction conditions.
