An Automated Method for Fluorometric Measurement of Proline in Grapes and Wines

A fully automated-continuous fluorometric method was developed on the basis of the manual method for measurement of proline in grapes and wines. Sixty-six grape jujce and wine samples were analyzed for proline and the values obtained by the automated fluorometric method agreed well with those by an amino acid analyzer with ninhydrin.
