β-Galactosidase was obtained by culture of Scopulariopsis sp. on wheat bran and by precipitating with ethanol from the extract. The enzyme was adsorbed onto DEAE-cellulose was treated with glutaraldehyde. The yield immobilized enzyme was low, but the immobilized enzyme could be applied to hydrolysis of lactose in acidic whey for at least one month at 55℃ and at pH values between 4.0 and 5.0. Immobilizatio of the β-galactosidase on phenol-formaldehyde resin was performed for comparison with DEAE-cellulose.
