Kinetic Expressions of Ethanol Production Rate and Ethanol Consumption Rate in Baker's Yeast Cultivation

A mathematical model of ethanol production rate and ethanol consumption rate in fed-batch culture of baker's yeast is presented.Ethanol was produced when available sugar concentration in the culture broth was greater than 0.28 g/l, and empirical equation was derived relating ethanol production rate to available sugar concentration. When available sugar concentration fell below 0.28 g/l ethanol was consumed. The specific ethanol consumption rate depended on not only the avaliable sugar concentration but also the dimensionless concentration of inhibitory substances. An empirical equation for the specific ethanol consumption rate was proposed which took account of these phenomena.The computed solutions based on the mathematical model agreed well with the experimental results obtained by bulk addition of molasses instantaneously.
