Based on several assumptions a mathematical model is presented which describes the growth of baker's yeast, Saccharomyces cerevisiae, subject to inhibition of an unknown product. The model shows that the specific formation rate of inhibitory substances is approximately linear to μ and the cell growth is inhibited non-competitively by the inhibitory substance. The constants in the model are determined from the experimental data of continuous cultures and fed-batch cultures with and without removal of inhibitory substances. The model successdully describes the growth of baker's yeast at several concentrations of substrate in the feed medium and initial cell concentrations in the fed batch cultures with or without removal of inhibitory substances.
