The‘ molten globule’ state has been regarded as an intermediate state between the native and denaturedstate of globular proteins. However, thermodynamically, the molten globule state is generally considered adenatured state, although, some notable exceptions have been reported. At pH 2, ovalbumin possesses featureswhich are characteristics of the molten globule state, and this study provides additional evidence ofmolten globule-like features. An analysis by differential scanning calorimetry shows that the ovalbumin moleculeat pH 2 resembles the native state more than the denatured state.
