短大生の調理技術の習得に関する研究(第2報)

In order to know the real situation of cooking skills with a knife, I improved the way of the evaluation in my first research. I gave performance tests such as cutting cucumbers in round slices and peeling apples to 57 students who major in health and nutrition in our junior college. The results are as follows: 1. The speed of both in cutting cucumbers in round slices and peeling apples improved trial by trial. 2. The total points of the 1st, 2nd, and 3rd trials showed that the skill in cutting cucumbers in round slices graduarlly improved trial by trial. 3. About the skill in peeling apples, the second trial showed bigger improvement than the first one, especially about the speed of peeling. But the total point of the third trial was a little lower than the second one. I suppose the reason was provablly because the students worried about the speed of peeling more than the carefulness of peeling apples thin and cutting an apple into three pieces exactly.
