Production of Galilc Acid from Tara by a Strain of Aspergillus niger

A method for producing gallic acid by microbiological hydrolysis of the tannins of tara powder is described. A simple extraction procedure is used. Optimal values for parameters including pH and aeration are determined. Yields of gallic acid are about 30% with respect to weight of raw material, which suggests that this method may be exploitable industrially.
