• A tannin extract of Fragaria vesca L. rhzomes was depolymerized by a strain of Saccharomyces rouxii. Optimal conditions of aeration and initial concentration of dry matter were found. The water-solubility of the extract increases from 43 to over 74% under the most favorable conditions.
