Effects of 1-Phenyl-1-Propanol and Ethanol during Respiratory Adaptation of Yeast

The effects of 0.2% 1-phenyl-1-propanol in combination with 1-10% ethanol during respiratory adaptation were studied in Saccharomyces sake Kyokai no. 7 (S. cerevisiae ATCC 26422) and S. cerevisiae IFO 0209.1-Phenyl-1-propanol caused a decrease of respiration rate in yeast cells and an inhibition of respiratory enzyme activities in the mitochondrial fraction, such as NADH_2-cytochrome c oxidoreductase, succinate-cytochrome c oxidoreductase, NADH_2 dehydrogenase and cytochrome c oxidase. The respiratory retardation and the enzyme inhibition by 1-phenyl-1-propanol were enhanced by the addition of 5-10% ethanol. These effects of the alcohols were similar in the 2 strains. The enzyme inhibition by 1-phenyl-1-propanol was reduced by the addition of 1% ethanol in some respiratory enzymes, but the respiratory retardation was enhanced in S. sake. These results suggested that 1-phenyl-1-propanol is useful as a respiratory inhibitor in ethanol fermentation although the respiration deficient mutation induced by 1-phenyl-1-propanol was protected by ethanol.
