The effect of seasonal variation on the thermal and freezing stabilities of actomyosin from three species of freshwater fish, namely, silver carp, grass carp and crucian carp, were investigated. The KD (thermal inactivation rate constant) and KF (freezing inactivation rate constant) of actomyosin Ca-ATPase were measured monthly for one year starting from May 1999. The experimental results demonstrated that the thermal and freezing stabilities of actomyosin showed significant seasonal changes and exhibited maximum in summer and minimum in winter in terms of KD and KF. In addition, a negative linear correlation of log KD and log KF with the environmental temperature was observed (P<0.001).
